Crispy mustard chicken
Makes about 4 to 6 servings.
Ingredients
Chicken
- 3 lb bone-in, skin-on chicken thighs
- salt
- olive oil
Crumbs
- 1/4 cup butter
- 1 1/4 cups bread crumbs
- 1/4 tsp salt
Sauce
- 1/4 cup Dijon mustard
- 2 cloves garlic, minced
- 1 1/2 t(b)sp (fresh) thyme
- 1 tbsp olive oil
- 1 tsp Worcestershire sauce
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/2 tsp crushed red pepper
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400 ºF.
- Melt butter in microwave. Stir in bread crumbs and salt.
- Combine all sauce ingredients.
- Rub thighs with salt. Brush evenly with sauce and place on parchment paper. Top with crumb mixture and drizzle a bit of olive oil.
- Bake for 35 to 45 minutes.
- Serve with lemon wedges.
