Quinoa caprese bake

Makes about 2 or 3 servings.

  1. Preheat oven to 350 ºF.
  2. Cook quinoa according to package instructions.
  3. Heat pasta sauce and tomato paste over low heat.
  4. Stir in heavy cream, parmesan, crushed red pepper, salt, and pepper.
  5. Remove from heat and stir in quinoa.
  6. Fold in half the mozzarella and half the tomatoes.
  7. Spread in baking dish. Top with rest of mozzarella and tomatoes.
  8. Bake 15 minutes, then broil 2 minutes.
