Quinoa caprese bake

Makes about 2 or 3 servings.
Ingredients
- 4 cups cooked quinoa (1 1/3 cups raw)
- 1 cup any pasta sauce
- 2 tbsp tomato paste
- 1/3 cup heavy cream
- 1/3 cup parmesan
- 1 cup mozzarella
- 1 cup grape tomatoes
- 1/2 tsp crushed red pepper
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven to 350 ºF.
- Cook quinoa according to package instructions.
- Heat pasta sauce and tomato paste over low heat.
- Stir in heavy cream, parmesan, crushed red pepper, salt, and pepper.
- Remove from heat and stir in quinoa.
- Fold in half the mozzarella and half the tomatoes.
- Spread in baking dish. Top with rest of mozzarella and tomatoes.
- Bake 15 minutes, then broil 2 minutes.
Notes
- You can use anything from 2 cups cooked quinoa (looser, creamier texture) to 6 cups (firmer, denser). Divide by 3 for the amount of raw quinoa.
