Creamy pasta sauce

Makes about 4 or 5 servings.
Ingredients
- 1 tbsp olive oil
- 2 tbsp butter
- 1/2 onion, minced
- 3 cloves garlic, minced
- 1/2 tsp black pepper
- 70 g tomato paste
- 3/4 cup cream
- 40 g parmesan, finely grated
- 1 tbsp lemon juice
- reserved pasta water
- salt
Instructions
- Heat oil and butter on medium and add onions, cooking until soft.
- Add garlic and pepper and cook a bit longer.
- Reduce heat to low and stir in tomato paste. Cook a few minutes longer.
- Add cream, then lemon juice, then parmesan, stirring until it all melts.
- Add reserved pasta water and salt to taste.
- Serve with penne and basil, or whatever you’d like.
Notes
- Be careful to avoid curdling the cream. You don’t want to boil it.
