Quick pasta sauce

Makes about 4 servings.
Ingredients
- 1 can whole San Marzano tomatoes (28 oz)
- 2 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp crushed red pepper
Instructions
- Strain tomatoes and discard liquid.
- Blend with remaining ingredients.
- Simmer for 10 to 20 minutes.
- Remove from heat and add cooked pasta.
Notes
- Make sure you get real San Marzano tomatoes that say “D.O.P.” on the can. Just “imported from Italy” or even “San Marzano region” is not enough.
- An immersion blender works well for blending the sauce.
- If you don’t need it all now, freeze in individual containers after blending.
- You can also use this sauce for Margherita pizza. No need to simmer it.
